My go-to weekday healthy breakfasts

I enjoy a balanced lifestyle of healthy, nutritious meals with a side of indulgent treats. Whatever I eat – I try to make it appealing, fun and super flavoursome.

Breakfast are my favourite meals of the day – partially because you burn them off regardless of what you have. But mainly because of the variety – sweet or savoury, healthy or indulgent, buffet-style sit-down or Mason jar on the go.

Here are five quick and easy breakfast options I turn to most mornings before work:

  1. Protein-packed green smoothie

This is my trusted smoothie mix – might sound random to some, or delicious to others, but it ain’t too sweet, or too green, it’s just right. For me.

Oats/Soy milk, one banana, half an avocado, half an apple, 1 kiwi, handful of spinach, table spoon of peanut butter, chia seeds, few grams of Chorella powder (5g = 600% of RD of vit D!) pinch of cinnamon, pinch of salt, squeeze of honey and blend, baby, BLEND!

2. Apple, bananas and peanut butter

As simple as slicing one apple and a banana (or other fruits) and dropping a dollop of organic crunchy peanut butter on top of.
3. Jumbo oats porridge with toppings

As the title suggests, I make a beautiful oatmeal with vegetable milk, desiccated coconut, goji berries and other seeds and dried fruit. And I top it all off with either yogurt and fresh fruit or nut butter, bananas and cinnamon. Here’s a recipe I shared a while ago.

4. Roasted almond butter, raspberries and honey on toast

Do as instructed in the title – it should look a little something like this:


5. Boiled egg and spinach on toast 

This is when I crave a savoury breakfast, after a gym workout – knowing it will give me protein, vit D and all the goodness. Sometimes I add avocado to this too. So you can see it as a twist on avocado on toast. Yum!
When the weekend comes…well, that’s a different story…of poached eggs, smoked salmon, pancakes, omelettes and other delicious combinations.
